– 4 salmon fillets
– 150g baby spinach
– 4g cumin
– 0.5g preserved lemon
– 1 tsp sugar
– 1 tbsp olive oil

Steps:

1. Season the salmon fillets with salt and cumin.
2. Blend the preserved lemon and sugar.
3. Sear the salmon fillets in a pan for about 3 minutes on each side.
4. Now it’s time to prepare your potato purée.
5. Dress the baby spinach with olive oil and a touch of the lemon relish.
